Crockpot Beef Tips, Tornadoes and Turtle-Brownie Sundaes

They say when life brings you lemons, make lemonade...I say, when life brings you tornadoes, make a big batch of brownies!

I have lived in -40 below degrees in Alaska and survived earthquakes in California, but I have never experienced anything so surreal like last night's (and our first) tornado.  Northern Colorado and a town 5 miles from us had two tornadoes touch down last night.  We could see one of them from our back patio.


The skies were so dark and quiet, yet clouds, thunder, lighting and hail were swirling all around us.  At one point I felt like Helen Hunt in Twister, standing outside in the rain, and I couldn't take my eyes off the sky, it was so mesmerizing.  However, instead of cows flying through the sky, like the movie, my dogs were running a muck, barking and barking trying to warn off the storm.


I was quite proud at how calm I remained through it, as I proceeded to make a comforting batch of brownies, which then turned in to turtle brownie sundaes with all the fixings.

These Crockpot beef tips are perfect for a stormy night, as they cook all day and ready when you walk in the door... add a little side dish and salad with it and you are ready to settle for a night in.


Crockpot Beef Tips & Gravy

1 1/2 lbs cubed beef (stew meat)
1 packet Dry Onion Soup Mix
1 can Cream of Mushroom Soup (although Cream of anything will work)
1 14 oz. can beef beef broth or stock
Salt & Pepper

***If you are freezing, dump all ingredients into gallon sized freezer bag***

Add beef cubes to Crockpot, season with salt & pepper.

In bowl combine soup mix, soup & broth, stir to combine.

Dump mixed ingredients over top of beef, stir.

Cook on low 6-8 hours.

Served with shaved Parmesan cheese over garlic herb angel hair pasta.

Chocolate Brownie Brittle Mousse and Chocolate Moose

Are you an "outy" or an "inny"?  I am an outy, and I'm not referring to belly buttons.  I am however referring to brownies.  This can be quite a debate in any given household or relationship.  Do you like the outside of the perimeter edge of the pan that has partial brownie crispy crust with a hint of the soft side included or are you completely crustless and only go for the soft cake and fudgy (is that a word?) parts.

My world has been changed forever.  Sheila G, a famous baker in Florida invented "Brownie Brittle" and will now become a millionaire because of it.  It's the simple ideas that really make you go, "Why didn't I think of that?"

These little cookie crunch brownie bites are amazing.  Every time I open the bag, I get this wave of fresh baked chocolate that immediately takes me back to my mom's brownies.  They are very dangerous to have around the house, to say the least.


I had a spare bag (amazingly enough) and wanted to create a treat with them.  I took some already made chocolate pudding and Cool Whip we still had in the refrigerator and made a pseudo "mousse". The crushed brownie brittle served as the base for the mousse and then I topped it off with a nice full size piece for the crowning touch.

Brownie Brittle Mousse

Measurements will vary, depending on how many your are making, but here is the ratio:

2 parts, prepared chocolate pudding
1 part, Cool Whip dessert topping (or more, to your liking)
crushed "Brownie Brittle"
whole pieces of "Brownie Brittle"

Add a small amount of the crushed brownie brittle to the bottom of your glass.  (I like to freeze my dessert glasses about an hour before I prepare the dish) Stir pudding well in a medium size bowl and carefully fold in Cool Whip, until it is all evenly mixed.  Spoon the mousse into your chilled glass. Top with a piece of brownie brittle.

Cherry Cheesecake Brownies

Today is a big shout out to my husband.  He just returned from a guys weekend in Pittsburgh with one of his buddies.  They toured the state and hit part of New York state also.  In their quest for the perfect sandwich, they scouted out the famous Primanti Bros. diner in search for the ultimate pastrami sandwich - it was found there!!

Also in Pittsburgh, is Abby Lee Dance Company Studios, home to the Dance Moms television show, which I think almost every teenage girl (and some moms) are addicted to - I call it the modern day soap opera for teenagers.  Okay, yes even I have gotten sucked into a few episodes...

Picture if you will, two 50-year old men walking into this ultimate teens dance studio that is overloaded in bling, fuschia pink and spandex.  They were on a mission to find gifts for their daughters. These dads did not dare get on a plane to come back home without tokens in tow.  I think that took great courage and love to be able to walk in there to fulfill their dad duties.

They picked out the perfect gift for their active daughters sports tops and shorts.  My husband deserved a special goody for his success.   I was short on time and had to wing it, but was able to pull off his two favorite desserts in one - cherry cheesecake and brownies with chocolate chips.  He is very particular about his brownies...likes them to have a cake texture (not fudge-like). and after the batter has been poured into the baking pan, he likes a couple of handfuls of chocolate chips to be sprinkled all around the pan, before they are baked.  Please know that there are just some days I am all about being "semi-homemade".  This dessert was awesomely easy and so rich and delicious at the same time.


Cherry Cheesecake Brownies
 Dedicated to great Dads everywhere.

(1) box of your favorite Brownie mix 
(ingredients needed to make brownies; eggs, canola oil and water)
(1) box of Jello brand No-Bake Cheesecake mix 
(ingredient needed to make cheesecake mix; cold milk)
(1) can of cherry pie filling
2 cups of semi-sweet chocolate chips, divided
4 Tbl. butter

Mix your favorite brownie mix according to directions and pour in prepared 9 x 13 pan.  Sprinkle 1-1/2 cups of chocolate chips all over batter.  Bake according to instructions.  Let cool.

Prep the cheesecake mix according to directions.  (Do not prepare the included graham cracker crust - save for another day/recipe).  Spread prepared cheesecake mixture all over the cooled brownies.
Let chill in refrigerator.

While cheesecake brownies are cooling, prepare the ganache.  Microwave the other 1/2 cup of chocolate chips in bowl for about 1-2 minutes.  Add the butter and whisk until you see a glistening, glaze texture.  Drizzle over cheesecake brownies and continue to refrigerate until ready to serve.

Spoon cherry pie filling over each serving, as needed.
