Bunny Bark and Blizzards

So there are snow days...and then there are SNOW DAYS!  Yesterday was sunny and 70 degrees and a beautiful sunset evening.  Mother Nature came in full force overnight and we woke up to over a foot of snow and blizzard wind conditions.  Looks like my patio and fire pit time is going to have to wait awhile.


Needless to say the girls were overjoyed when they found out school was cancelled.  My husband and I looked at the driveway, the road in front of our house and then at each other...looks like work is cancelled today too.  There was no way we were getting out today.


Well, driving to work that is.  Bless his heart, he was working with shovels, brooms and snow blowers trying to tackle the what was then 2 feet of snow compiled.


My job was to deal with two restless Labradors and two bored teenagers, while catching up on laundry and Blue Bloods...oh and listening to my husband upset that golf season won't start until June now...oh, please no!!  Please do not make me listen to that until June!!!




My poor new "Spring" wreath has seen better days.  It got pelted with wind and snow today...just can't get a break here!  I have also seen better days...no shower for this girl today (don't judge).  It is very rare that I get to have a "sea day"...or snow day as the case may be.  My family is lucky that I even got out of my pajamas today...at 2pm!!


Since I had the afternoon to get caught up on new recipes and baking, I played with a spring version of my Holly Jolly Bark that I made at Christmas.


The bark matched a precious tiered dessert platter my mom gave me perfectly.


Scrumptious little snack portions for those long snowy days.

Bunny Bark

7 full size graham crackers, broke in pieces (or 14 vanilla Oreo cookies)
1-1/2 cups pretzel sticks, broke in pieces
1 cup Easter/Spring pastel colored M&M's candies
1 pound vanilla flavored quick melting chocolate
pastel colored sprinkles


Line a large cookie sheet with parchment paper.  Lay out the broken graham crackers, pretzels and M&M's.

Melt the white chocolate bark according to package directions.  Pour melted chocolate over crackers, pretzels and candies.  Use an offset spatula to spread chocolate evenly and add the pastel sprinkles over chocolate.

Let set in refrigerator for one hour, so chocolate can set.  Cut into bite size pieces and package in Easter baskets.  (Use any leftover scraps from the sides as topping for ice cream -Yummy!!)

Baked Shrimp Scampi and Bargain Shopping

Okay, that whole story I told you Monday about "signs of an early spring"...I lied!!  In fact, forget you ever read that, I'm sorry to report.  We woke up to 12 inches of snow this morning...needless to say the six of us (dogs included) at home were not in the greatest of spirits.  My husband was a trooper though as he fired up the snow blower and took care of our driveway and the neighbor's sidewalk so everyone could get out today.  I thanked him with a fresh batch of baked blueberry muffins to warm up his very frozen hands and face.

So, here is where I am this morning.

Well, since I will be going this weekend without any backyard or patio time, looks like it will be inside house chores and some shopping.  I'm on the hunt for new everyday dishes.  It is taking me forever to find the perfect plates.  It took me all of 10 minutes to select my last vehicle, but I am now going on over a year trying to find these dishes.  I am so particular about the style, color, size, embellishments, shape etc..The ones we have must be at least ten years old and are starting to show signs of wear...kind of like me. 

At any rate, I love scouting out a good deal or bargain.  I am most definitely a fan of coupon clipping and downloading. Now mind you, I'm not like those "extreme couponing" households on tv.  I mean who really needs 27 containers of bulk mayonnaise?  Not to mention who has room for all that...but I say more power to them for trying to make a difference.  They did however get their own television series, so they must be doing something right.


I am one to hit the clearance area first, whenever I enter a store.  I try to find those hidden treasures before I go any further.  I found this container (which was originally in a canister set), being sold all alone, without its lid for $ 2.99...perfect for my whisks and baking utensils.  I also scored the coordinating coffee mug for .59 cents! There's only one and it's just for me...my special coffee mug.

If you are observing no meat Fridays for Lent or just want a quick, flavorful dinner, this dish is awesome.  I love how easy it is and can be very versatile, depending on your tastes.


Baked Shrimp Scampi
Inspired and Adapted by Damn Delicious

2 Tbl. chicken broth
2 Tbl. fresh lemon juice
1/2 cup Italian Seasoned Panko Japanese breadcrumbs
1/4 cup butter, melted
2 pounds medium shrimp, peeled and deveined
2 Tbl. olive oil
3 cloves garlic, minced
1/4-1/2 tsp. crushed red pepper flakes
2 Tbl. capers, drained
salt to taste
pepper to taste
2 Tbl. chopped fresh parsley leaves

1 box angel hair pasta, cook according to package directions
freshly shaved Parmesan cheese

Preheat oven to 425 degrees.  Add chicken broth and lemon juice to a 9 x 13 baking dish; set aside.

In a small bowl, combine Panko and melted butter; set aside.

In a large bowl, combine shrimp, olive oil garlic, red pepper flakes and capers;  season with salt and pepper, to taste.

Add shrimp mixture in a single layer to the prepared baking dish.  Sprinkle evenly with Panko/butter mixture.

Place in oven and bake until bubbly and golden brown, about 10-12 minutes.

Serve immediately over angel hair pasta and garnish with parsley and Parmesan cheese.

Pairs beautifully with a fresh Caesar salad and chilled buttery Chardonnay.

Orange Olive Oil Cake

It never fails...after the holidays are over when the cookies, fudge and candy canes go away, the cravings hit.  I think we all need to go into "sweets rehab" right after the new year, because after about two weeks of no desserts, I start hearing it...pantry cupboard doors opening and shutting, the refrigerator light goes on, then I hear the freezer door shut and vapor lock.  "Don't we have any treats in the house?" echoes every night, at about 8 pm from various voices.  So there you have it, if there are too many sweets in the house I hear about it, but if there aren't any treats I really hear about it.

As I am altitude challenged here, I always hesitate when it comes to baking...especially trying new cake recipes.  It took be about a year of us being in the Rocky Mountains before I figured out how to bake in high altitudes.  I saw this dessert on Food Network a few weeks ago and thought it looked really good.  I have made a few olive oil cakes in the past (at sea level) and enjoyed them.  (Since olive oil is good for you and in the Mediterranean Diet, this cake can't be bad for you, right?)


I tried branching out and get fancy with the powdered sugar design, as I came across an extra doile in my pantry.  The finished product reminded me of all our snowflakes this winter and the snow that we still are dealing with.

This cake is beyond amazing.  It is a dense cake, but incredibly light and the hint of orange sends it over the top.  My husband couldn't stay out of it and he doesn't even like cake..so that really says a lot.



Orange Olive Oil Cake

Butter, for greasing the pan
1 1/4 cups all-purpose flour, plus more for the pan
3/4 cup sugar
2 eggs
1/3 cup olive oil
1 teaspoon vanilla extract
Juice and zest of 1 orange (about 3 tablespoons juice, 1 tablespoon zest)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Confectioners' sugar for dusting


Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.

Mix together the sugar and eggs in a medium bowl with a hand mixer on medium speed until blended and light. Drizzle in the olive oil and vanilla and mix until light and smooth. Add the orange juice and zest and mix well. Sift together the flour, baking powder, baking soda and salt in another medium bowl. Add the flour mixture half at a time to the wet ingredients and mix on low just to incorporate.

Pour into the prepared cake pan and bake, 25 to 30 minutes. Let the cake cool 15 minutes, dust with confectioners' sugar and serve.

The Masters Pimento Cheese Sandwich

Today Bubba Watson took home his second green blazer after winning this afternoon's annual Masters tournament.

I caught bits and pieces of the tournament as I have been non-stop in the kitchen all day producing countless sweets for outgoing care packages tomorrow.  My poor oven has worked well into overtime today.

Movie passes, popcorn and lots of goodies.
However, there were others in our family that just could not find the drive to do anything...but nap!!  It was a cold, snowy and dreary day which definitely lended itself for a good snooze (especially after the girls pulled an all nighter sleepover at a friends).




I kept to my promise and produced the famous Masters Pimento Cheese Sandwhich for my husband.  
It was awesome!!


Pimento Cheese

1/4 cup cream cheese, room temperature
1/2 cup mayonnaise
1/2 cup sour cream
1/4 tsp garlic salt
2 cups shredded sharp cheddar cheese
1/2 cup shredded Parmesan cheese
1/2 cup diced pimentos

Whip cream cheese until smooth.  Add in mayonnaise, sour cream, and garlic salt.  Whip until smooth.  Stir in remaining ingredients.  Cover and refrigerate 30 minutes, or until ready to serve.

I turned my Pimento Cheese into a dip for crackers. - Even better!!!

Honey Ham Biscuit Sliders - Wife Of The Year

This morning I won the "Wife of the Year" Award.  Well, actually it was self-awarded, but I'm sure many would agree with me.

Today was the first golf tournament of the season - yeah !!!!  I get my mornings back to myself again...pajamas, coffee time, food episodes, reading magazines, blogging, manicure, pedicure...ah, the life of a golf widow.

However, the weather was 30 degrees with a chance of rain and snow.  Tournament still on, husband bundled up and ready to go.  Tee time set for 9:20 am.  However he realizes that he never had a chance to buy his "winter" golf gloves before the tournament.  Slight issue...sports stores don't open until 9:00 am., and there is no way he will have time to drive out, purchase gloves and make his tee time, in time.

"Honey, will you please run out and buy the winter gloves for me and hand warmers and drop them off a the clubhouse before my starting time?"  This was all asked as I was in my pajamas, just put the recliner in "lounge position" and topped my coffee off with my own warmer.  I'm not going to say what went though my mind at that point (because he also reads this blog...)


The only saving grace he had was that I also needed to do the weekly dinner menu grocery shopping and needed to get out eventually...just wasn't planning on that early.

and then this happened.
For those chilly tournament mornings, these are the best little breakfast sandwiches.


Honey Ham Biscuit Sliders

1 can Grands Jr Butter Tasting Biscuits (10 count)
1/2 lb deli ham, shaved
1 cup shredded swiss cheese
1/4 cup honey mustard dressing
1 Tbsp butter, melted
2 Tbsp honey

Preheat oven to 400.

Lightly spray a 9-inch pan with cooking spray.  Set aside.

Separate each biscuits into two layers.  Spread each layer with honey mustard and top with swiss cheese.  Place half of the biscuits, cheese side up, in the bottom of prepared pan.  Top with ham.  Top ham with remaining biscuits, cheese side down.  Brush biscuit tops with melted butter.

Bake 12-15 minutes, until golden brown.  Heat honey in microwave for 20 seconds.  Brush biscuit tops with warm honey.  Serve immediately.

Mediterranean Chicken & Sausage (Reinvented) During a Rough Week

It is only Wednesday and I am done!!  My poor family has had to deal with my crankiness for three straight days and I don't see an end in sight.  My hormone level is extremely high and patience level is beyond low.   I just want to go hibernate for the next three months, like our neighbor bears.

I had my first neurotic "mother-in-law" moment and stirred up my attitude (sorry, Tyler and Rachel).  I will make it up to all of you and send out another Nana Care Package for everyone.

My truck had to go in for repairs on Monday and I still don't have it back.  My husband has been gracious enough to help me with my 30 minute commute each way, but the poor soul has to listen to me the entire way with my rantings.

It is -7 degrees and we haven't seen much of the sun this week.  It snows, gets warm, freezes, black ice everywhere, and then it starts it's trend all over again...just can't get a break.

  Then tonight my daughter says she needs my help with math.  Now mind you, I was an "A" math student, but my Freshman Algebra topics, my kids were learning in 4th grade - times have most definitely changed.  She is working on a math story problem from the book The Pit and the Pendulum by Edgar Allan Poe.  Now what this story has to do with math is beyond me, but I went along with it.

Essentially they needed to figure the rate of the pendulum and if the prisoner had a reasonable amount of time to escape.  I said, "Of course he had a reasonable amount of time, he escaped didn't he?".  She thought that was pretty funny after she pondered on it for a minute.

Then she said as part of her assignment, she has to make a pendulum from household objects...of course she does, because it is due tomorrow and it's 8:00 pm on a weeknight and once again I have been given no warning of another major school project due.

After my blood pressure calmed down, I thought - I got this!!!  Two item pendulum:  Banana Hanger and Pizza Cutter !!  Thank God for kitchen gadgets.

Yes, I know this recipe says it is from 2005, I have an archive of recipes from magazines, family, friends and now websites.  You just can't toss away the classics.  Since I wanted to clean up the refrigerator from the weekend, I reinvented it by changing up some of the ingredients.


Mediterranean Chicken & Sausage
from Kraft Food & Family Magazine, Winter 2005

1 lb. sweet Italian sausage (I used my turkey smoked sausage kielbasa)
1/2 cup Kraft Creek Vinaigrette Dressing (I used my Red Wine and Olive Oil Dressing)
3 lb. chicken pieces (I used 2 large chicken breasts, cut into 1" pieces)
5-6 slices of bacon, cut into pieces (this is my addition, since everything is better with bacon)
1/2 lb. medium mushrooms, halved
1 can (14-1/2 oz.) chicken broth
2 Tbsp. cornstarch
1/4 cup water
3- 4 dashes of balsamic vinegar (I added this for flavor and color)
3-4 dashes of Worsteshire sauce (I added this to give a little richness and depth)
6 cups cooked Minute White Rice (I made a box of our Rice-A-Roni, Rice Pilaf)



PIERCE sausage with fork. Cook in large skillet on medium-high heat 15 to 20 min. or until browned. Remove from skillet. Cut into pieces; set aside. Cook bacon in same pan, until just getting crispy; remove from pan and set aside.

ADD 1/4 cup of the dressing and chicken to skillet; cook 10 min. or until chicken is browned on both sides. Stir in sausage, bacon, mushrooms, broth, balsamic vinegar, Worsteshire sauce and remaining 1/4 cup dressing.

DISSOLVE cornstarch in water; add to skillet. Bring to boil. Reduce heat to low; cover. Simmer 15 min. or until chicken is cooked through. Serve over rice.

Black and White Parfaits and Tinis and Back To School

Tomorrow is back to school (my third favorite day of the year)...Hallelujah !!!!  After 2-1/2 weeks of vacation, the girls are off to be with their peers, books, volleyball  and a normal routine again and I couldn't be happier.

We had about a foot of snow come in and blanket us this weekend.  I couldn't believe what I heard come out of the girls' mouth..."I hope we have a snow day tomorrow and they close school."  Are you kidding me???  No, off to school you will go..snow, hail, freezing rain...out of the house you will be !!


 The dogs had a great time playing in the snow this weekend, bouncing through all the white powder and attacking the soccer ball and anything else they can find buried in the yard.


My husband said that Theo looks so black against the white snow.  Right then, I have no idea why, but I immediately went to my mom's dessert that she used to make for us when we were little.  Two ingredients from the 70's and I always felt like she worked all day and it was the most special treat for us to have on Sunday nights after our pot roast.

This worked out great since I am trying to rid of the extra pantry items for over the holidays.  Of course, I couldn't leave well enough alone, so to go with the black and white parfait I also created a black and white martini.

Cool Whip Topping
Nabisco Famous Chocolate Wafers

Layer (starting with the whip cream) in a small glass or parfait glass, the whip cream and alternating with a chocolate wafer.  Layer until you get to the top and finish with the whip cream.  Top off with one of the wafers crushed and sprinkled on top.

Cover each glass with plastic wrap and put in refrigerator for 6-8 hours.

1/2 cup milk
1 mini Smirnoff "Fluffed Marshmellow" flavored vodka
1 mini Smirnoff "Vanilla" flavored vodka
1-1/2 teaspoon JELLO-O White Chocolate flavored instant pudding mix
Hershey's chocolate sauce
crushed Nabisco Famous Chocolate Wafers

Mix milk, both vodkas and JELLO-O instant pudding mix in shaker with ice.  Shake for about 30 seconds.

Dip rim of martini glass in chocolate sauce, then dip rim into crushed wafer crumbs.  Strain drink into glass.

Quick Candy Cookies = Comforts

I love Saturday mornings, for the time being anyway....the teenagers are exhausted from five straight days of volleyball and they sleep in.  The snow has not hit us yet, the golf courses are still open which means my husband is out getting in another 18 holes while he can.  Pure peacefulness on this Saturday morning.

I get to snuggle in my cozy blankets with my guard dogs, coffee and quietness.  It's a time for me to get caught up on my food shows and do absolutely nothing for a couple of hours. I then slowly ease into duties and errands...bank reconciliation, laundry, getting caught up on this blog of mine that my family says, "I have become obsessed with".  They are ready to kick me out of our family dinners, since I keep photographing every meal. :)

Today's errands consisted of preparing for the upcoming high school spirit week and homecoming.  I am not a fan of spirit week.  Now don't get me wrong, I am all about school spirit.  Unfortunately, in today's schools spirit week ends up costing about $100.  For example last year the school had twin day.  Now I already have twins and you would think that my twins could just dress alike and be twins for the day, right??  No, of course not....my twins have to reel in their friends to be each other's twins. Really???

Later in the morning my best friend Felicia called me and we were able to get caught up on the happenings of our families.  She lives in Fairbanks, Alaska, bless her heart!  She told me that they already had their first real hard snow.  How could that be, it's not even October yet!!??

Then I went to my culinary compadre friend Toni's blog, A Taste of Alaska, and read one of her recent postings and saw all the snow in Fairbanks already on her patio furniture.  I know how devastated she is that her gardening season was cut much too short this year.

I finished up my morning watching The Pioneer Woman.  Is it just me or does everyone get ravishingly hungry watching the food channels.  Today she made these unbelievable, seriously sinful treats.  She hit my lifelong addiction today.  Reese's Peanut Butter Cups - my total weakness.  Just try them on a s'more, you'll never go back to a plain chocolate bar on them again, I promise.

To make my arctic girlfriends feel better, I made them The Pioneer Woman's cookies I saw this morning.  Unfortunately, I cannot send them the cookies, as it sounds like they would be frozen by the time they arrived.  Hopefully they will read this though and know that I was thinking of them today.  Not to worry though, I'm sure my spirit week teenagers will have the cookies inhaled before noon, as my husband described them as "Reese's Peanut Butter Cups on steroids".  Only an athlete could come up with that analogy....as he finished off eating six of them!


Quick Candy Cookies

(1) Refrigerator Peanut Butter Cookie Dough Roll
(24) Miniature Reese's Peanut Butter Cups

Preheat oven to 350 degrees.

Spray mini-muffin tin with nonstick spray.  Slice the cookie dough into 1 to 1-1/2" slices..  Lay the slices on their side and cut them into quarters.  Place each quarter into the mini-muffin tin.  Peel the wrapper from as many candy as cookies you're going to make.

Bake the cookie dough for about 6-8 minutes at the most.  You'll want to take them out just when they start to turn golden.  Almost as soon as you pull the warm cookies from the oven, begin lightly pressing one piece of candy into each cookie.  the warmer the cookies, the better.  They grab onto the pieces of candy and work their magic, almost even hugging the candy with a warm wrap.

When their all done, carefully remove from muffin tins with a spoon and arrange on a platter.
