Wisdom...(Words and Teeth) and Prosciutto-Wrapped Chicken

We are now 24 hours into my daughter's wisdom teeth surgery and her recovery.  Bless her heart she was amazing through the entire procedure.  Her first time under anesthesia and any type of surgery. She is so strong and resilient and never complained all day.

The hardest part is trying to give words of wisdom and comfort someone who is under the influence and is not making any sense.  She had a couple of good one liners during the ride home and I had to hide my laughter.  At one point she had me in tears I was laughing so hard at her off the wall comments, coming off her drugs.

Leave it to me the "list lady" to write down the times of meds schedule so I wouldn't forget or get the two crossed.  The nurses were saying so many instructions as we were checking out my head was spinning and knew I had to write it all down when we returned home.

When we got home, I lit every candle in the house for my little patient.  I closed the blinds, got her settled on the Family Room couch, complete with her favorite Seahawks blanket, and kept a very serene environment for her recovery.

Her greatest friend, protector and now nurse, Theo, did a great job sharing his love and helping her heal.  I think all the serenity candles (and blanket) made for a day of napping for him as well.

So, the three of us enjoyed our "Blue Bloods" marathon on tv and we settled in for a day of rest. When everyone came home for the night, it was time for me to go from nurse, to chef.

Super easy chicken dish I found on Pinterest a few weeks ago and just got around to making it.  The Bon Appetit website had an amazing looking Eggplant Panzanella and Raisin-Pine Nut Vinaigrette to accompany it, but I was too exhausted to take that on...going to need to save that for another night.


Prosciutto-Wrapped Chicken

6 (6-ounce) skinless boneless chicken breast halves
8 ounces Taleggio cheese, rind trimmed, cheese cut into six 2-inch long slices
12 thin slices prosciutto

** for my own sauce:
2 cups chicken broth
2 Tbl. dijon mustard
1/4 cup heavy cream

Place chicken breasts on work surface.  Using sharp knife and starting at thickest side of 1 chicken breast, cut 2-inch long, 1-inch deep horizontal pocket, being careful not to cut through completely to other side of breast.  Insert 1 piece of cheese in pocket and press opening closed.  Sprinkle chicken with a little salt and pepper.  Place 2 prosciutto slices side by side on work surface, slightly overlapping on long sides.  Place 1 chicken breast crosswise atop center of prosciutto slices;  wrap prosciutto slices around chicken, covering completely and pressing to adhere.  Repeat with remaining chicken, cheese and prosciutto.

Preheat oven to 350 degrees.

Heat 1 tablespoon oil in large skillet over medium-high heat.  Add 3 chicken breasts to skillet and cook until browned, about 4 minutes each side.  Transfer chicken to large baking sheet and repeat with other 3 chicken breasts. ** Save skillet drippings and remnants for sauce.

Roast in oven approximately 15-20 minutes (or until cooked through).  Transfer cooked chicken to cutting board and let rest 5 minutes.

**While the chicken is roasting deglaze skillet you cooked chicken in with the chicken broth on high heat.  Scrape up all the prosciutto and chicken bits with broth.  Turn heat to low and whisk in dijon mustard.  Take off heat and whisk in heavy cream.  Let simmer until chicken is done in oven.

Bistro Sandwich and Best Day Ever

One of our favorite parts of road trips are the parking picnics.  This past week during our road trip to, from and around Oregon, we had a great time packing up the car with all the necessities for car picnics and road trip snacks, loaded and ready to go.

During one of our days in Oregon, we had an afternoon rafting trip with Ouzel Outfitters planned on the McKenzie River, in Blue River. Before the rafting, we stopped at Paradise Campground where we were scheduled to launch and enjoyed a beautiful, sunny picnic by the river.  Best day ever!!

Before our Oregon adventure, I tried out a new weekend lunch sandwich at our house.  I think it's safe to say, this is our new ultimate sandwich for our "staycation" weekends.  It is so easy to make, luscious flavor and perfect any time of year to enjoy.

I made it with my mom's potato salad recipe and a nice cold glass of Arnold Palmer (ice tea/lemonade combo.)  I see this in tomorrow's future....errands, shopping, farmer's market, laundry, bistro sandwich, big nap!!

Bistro Sandwich

1 loaf, rustic baguette
8 slices (1 package) prosciutto
4 slices Swiss cheese
butter
fig jam
olive oil
salt
pepper

Line a cookie sheet with foil or parchment paper.  Preheat oven to broil setting.

Cut baguette (crosswise) into 4 equal pieces.  Cut those pieces into halves (so you have a top and bottom piece.

Lay bread on cookie sheet.  On bottom portion bread, spread a layer of butter, then layer of fig jam. Place 2 slices of prosciutto on each bottom.  Add 1 slice of Swiss cheese on top of prosciutto. Drizzle a little olive oil on the cut top piece of bread and a little on the cheese.  Sprinkle a little salt and pepper on both breads.

Place cookie sheet under broil for about 1 to 1-1/2 minutes.  * Keep an eye on them, as they broil really fast.  Take out of oven and put top piece of bread on lower piece, while the cheese is still hot. Enjoy!!

Paninis and My Handyman

I married my husband for three reasons: His blue eyes, great sense of humor and his Makita drill set, seriously.  Well, maybe there were a few other reasons too.....

At any rate, he really is quite handy.  I guess being in the construction industry for over 25 years, you tend to pick up a few tricks of the trade.  The problem is I have also been in the same industry for the same amount of time and we are both think we are the Chiefs in the house...neither one of us wants to be the Indian.  Makes for an interesting marriage that's for sure.  That sense of humor on both our parts comes in very handy also.

Well my husband also has very good (and expensive taste) in washers and dryers.  Laundry is a very big thing to him.  His perfect dream house would have a laundry room bigger than our bedroom, I'm not even kidding here.  He loves to wash, dry and fold laundry, and truth be told he is much better at it than I am.  He says it's a sense of accomplishment to have everything clean and neatly put away in its place.

As you can imagine, we really put our washer and dryer to the test with all our family's laundry.  Recently our appliances were not working up to par, so I called in a reputable appliance company to come out and see what the dryer noise and leaking washer was all about.  Since our appliances are from Sweden, there aren't many companies that can repair them.  I should have kept that in the back of my mind during our "diagnostic appointment."

I will fast forward and spare the details.  The bottom line from them was " It's going to take several hours to take them apart as they are very difficult and timely to replace the dryer drum ball bearing and replace the water pump in the washer", to the tune of nearly $650.00 to fix the problems.

Now mind you, I am just coming off of Christmas and birthday budget$, so needless to say I almost had a breakdown right then.  I said thank you very much for coming out and I would need to discuss it with my husband.  Well, I called him and broke the news....a half hour later he called me back and said he was able to purchase the new ball bearing for $71.00 and the new water pump for $48.00.  Now, I am mad!


My husband assured me, no problem....we can do this.  He Googled instructions on how to replace these pieces and guess what (thank God for Google), there were actual YouTube videos on replacing these items in our exact brand, make and model appliances.

In less than an hour, we had both parts replaced.  Now I am really, really mad!!!  I cannot believe that a company can get away with that - $650.00 ARE YOU KIDDING ME?? !!

Well once again, God Bless my husband and his Makita.  We were able to conquer corporate America and achieve DIY sucess - Victory Is Sweet !!  It was time to celebrate with his favorite lunch - paninis.


Prosciutto Paninis
Adapted from Giada DeLaurentiis

2 slices of fontina cheese
2 slices of rustic white bread
1 thin slice of red onion
1 thin slice of tomato
1 thin slice of prosciutto
6 fresh baby spinach leaves
freshly ground black peper
2 tsp. olive oil

Place one slice of fontina cheese on 1 slice of bread.  Top with the onion, then the prosciutto, tomato and the spinach.  Sprinkle with the pepper.  Top with the second slice of fontina, then with the second bread slice.  Brush both sides fo the sandwich with the oil.

Preheat panini grill or a ridged grill pan over medium heat.  Grill the sandwich until the bread is golden brown and the cheese melts, pressing down.
